Instructions

  1. Pat the chicken dry with paper towels and let come to room temperature for about 20 minutes. Season both sides generously with salt and pepper.
  2. Heat a 12-inch cast iron skillet over medium-high heat for 2-3 minutes. Add olive oil and 2 tablespoons of butter. Swirl to combine; when the butter stops foaming and smells nutty, it’s ready.
