A quick and easy party appetizer featuring mini smokies wrapped in crispy bacon and caramelized with brown sugar for a sweet and savory bite.

  • 1 pound mini smokies (bite-sized smoked sausages)
  • 12 slices thin-cut bacon, cut in half
  • ½ cup packed light brown sugar (about 100 g)
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of cayenne or smoked paprika for heat
  • Toothpicks for securing bacon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, toss mini smokies with brown sugar and black pepper. Add cayenne or smoked paprika if desired.
  3. Cut each bacon slice in half. Wrap each mini smokie with one half slice of bacon, securing with a toothpick.
  4. Place wrapped smokies on a wire rack set over a rimmed baking sheet. If no rack, place directly on foil-lined baking sheet.
  5. Bake for 20-25 minutes, turning halfway through to crisp bacon evenly. Look for bubbly caramelized sugar and golden brown bacon.
  6. Remove from oven and let rest for 5 minutes to allow sugar glaze to harden.
  7. Serve warm, ideally fresh from the oven.

Notes

Use thin-cut bacon for best crispiness. Turn smokies halfway through baking for even caramelization. If bacon crisps too fast, tent loosely with foil. Let rest after baking to harden sugar glaze. Store leftovers in airtight container refrigerated up to 3 days; reheat in oven to restore crispiness. Avoid microwaving to prevent soggy bacon.
