A fun and easy Halloween recipe featuring crispy tortillas filled with seasoned black beans and mozzarella cheese strips that mimic mummy bandages. Perfect for kids and festive gatherings.

  • 4 medium flour tortillas (8-inch)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup shredded mozzarella cheese (about 100g)
  • 12 tablespoons olive oil or butter
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Pinch of salt and pepper
  • Optional: finely chopped red onion
  • Optional: fresh cilantro for garnish
  • Optional: pinch of chipotle powder
  • Optional for serving: sour cream or guacamole

Instructions

  1. In a mixing bowl, mash the drained black beans with a fork or potato masher to a slightly chunky texture. Stir in cumin, smoked paprika, salt, pepper, and optional finely chopped red onion.
  2. Cut the mozzarella into thin strips about 1/4 inch wide to mimic mummy bandages. Set aside.
  3. Lay one tortilla flat on a clean surface. Spread about 1/2 cup (120g) of the black bean mixture evenly, leaving a small border around the edge.
  4. Arrange the mozzarella strips across the filling in a crisscross pattern with small gaps to mimic mummy wrappings. Top with another tortilla.
  5. Heat a non-stick skillet over medium-low heat and add 1 tablespoon of olive oil or butter. Let it melt and coat the surface.
  6. Transfer the assembled quesadilla to the pan. Cook for 3-4 minutes until the bottom tortilla is golden and crispy.
  7. Carefully flip using a spatula and cook the other side for another 3-4 minutes. Press gently with the spatula to help the cheese melt and the quesadilla seal together.
  8. If the cheese hasn’t fully melted, lower the heat and cover the pan briefly for 1-2 minutes.
  9. Remove from heat and let cool for a minute before cutting into wedges.
  10. Serve warm with sour cream or guacamole for dipping.

Notes

Do not overfill the quesadilla to avoid sogginess. Use medium-low heat to allow cheese to melt and tortillas to crisp without burning. Leave gaps between cheese strips to let steam escape and keep the tortilla crisp. Let quesadilla rest for a minute before slicing to help cheese settle. For gluten-free, use corn tortillas; for vegan, use dairy-free cheese and plant-based butter.
