  • ½ cup cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 large egg, beaten
  • Vegetable or canola oil for frying (about 2 cups)
  • ½ cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar or lime juice
  • 1 small garlic clove, minced (optional)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a small bowl, whisk together mayonnaise, Sriracha, honey, rice vinegar, and minced garlic until smooth. Set aside in the fridge.
  3. In a shallow bowl, combine flour, cornstarch, salt, and pepper. In another bowl, beat the egg.
  4. Dip each shrimp first into the egg, letting excess drip off, then dredge in the flour mixture, pressing lightly to coat evenly. Place coated shrimp on a plate.
  5. Pour vegetable oil into a skillet to about 1½ inches deep and heat over medium-high heat to 350°F (175°C).
  6. Fry shrimp in batches for about 2 minutes per side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels or wire rack.
  7. Toss shrimp gently with spicy mayo sauce or serve sauce on the side. Garnish with chopped green onions or sesame seeds if desired.

Notes

Pat shrimp dry thoroughly to ensure crispiness. Maintain oil temperature at 350°F to avoid greasy shrimp. Fry in batches to keep oil temperature steady. Sauce flavors improve if made ahead and chilled. For gluten-free, substitute flour with almond or rice flour and use gluten-free mayo. Baking option: bake at 425°F for 10-12 minutes for a lighter version.
