  • 4 pork chops, about 1-inch thick, bone-in or boneless
  • ¾ cup finely grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or sweet)
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack inside a rimmed baking sheet and lightly spray with cooking oil.
  2. Pat the pork chops dry with paper towels. Season both sides lightly with salt and pepper.
  3. In a shallow bowl, combine the grated Parmesan, panko breadcrumbs, garlic powder, paprika, dried oregano, and remaining salt and pepper. Mix well.
  4. Drizzle the olive oil into the Parmesan mixture and stir with a fork until the crumbs are evenly moistened and clump together slightly.
  5. Spread a thin, even layer of Dijon mustard over both sides of each pork chop using a pastry brush or the back of a spoon.
  6. Press each mustard-coated pork chop into the Parmesan mixture, coating both sides evenly. Use your hands to press the coating firmly into the meat.
  7. Place the coated pork chops on the prepared wire rack, making sure they are not touching each other.
  8. Bake for 18-22 minutes, until the coating is deep golden brown and the internal temperature reaches 145°F (63°C) when measured with a meat thermometer inserted into the thickest part.
  9. Let the pork chops rest for 5 minutes before serving. Serve immediately.

Notes

For extra crunch, double-coat the chops by dipping them back in mustard and pressing into the Parmesan mixture again. Let the coated chops rest for 5 minutes before baking to help the coating adhere. If you don’t have a wire rack, flip the chops halfway through baking. Use freshly grated Parmesan for best results; pre-shredded cheese contains anti-caking agents that prevent proper crisping.
