These crispy bacon-wrapped little smokies are a crowd-pleasing appetizer made with just three ingredients: little smokies, thick-cut bacon, and brown sugar. Baked on a wire rack for perfect crispiness, they disappear faster than anything else on the table.

  • 14 oz package little smokies (e.g., Hillshire Farm or Johnsonville)
  • 1 lb thick-cut bacon (e.g., Wright Brand)
  • 1/2 cup brown sugar (light or dark)
  • Toothpicks (optional, for securing bacon)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Cut each bacon slice into three equal pieces (about 2 inches long).
  3. Wrap one piece of bacon around each little smokie, overlapping slightly. Secure with a toothpick if desired.
  4. Pour brown sugar into a small bowl. Roll each wrapped smokie in the sugar, pressing gently to coat evenly.
  5. Arrange sugared smokies on the wire rack, leaving space between each for air circulation.
  6. Bake for 35-40 minutes, rotating the pan front to back at the 20-minute mark, until bacon is crispy and sugar is caramelized.
  7. Let rest on the rack for 5 minutes to allow sugar to set.
  8. Transfer to a serving platter and serve warm. Remove toothpicks if desired.

Notes

Use cold bacon for easier handling. Pat smokies dry before wrapping. Do not stretch bacon when wrapping. Line pan with foil for easy cleanup. Watch the sugar during the last 5 minutes to prevent burning. For a spicy kick, add 1/2 teaspoon cayenne pepper to the brown sugar. Can be prepped up to 24 hours ahead and refrigerated unbaked.
