  • 12 medium fresh jalapeños, washed and halved lengthwise
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (100 g) shredded cheddar cheese
  • 12 thin slices bacon (applewood-smoked recommended)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1 tablespoon chopped fresh cilantro or parsley
  • Optional: cayenne pepper or smoked paprika to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice each jalapeño in half lengthwise and carefully scoop out the seeds and membranes. For less heat, remove all white pith.
  3. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix until smooth. Fold in herbs or spices if using.
  4. Stuff each jalapeño half with the cheese mixture, ensuring a generous but not overstuffed amount.
  5. Wrap each filled jalapeño half tightly with one slice of bacon, overlapping slightly. Secure with a toothpick if needed.
  6. Place the bacon-wrapped poppers seam side down on a baking sheet or wire rack.
  7. Bake for 20-25 minutes, rotating the pan halfway through, until bacon is crispy and filling is bubbly.
  8. Let poppers rest for 5 minutes before serving to allow filling to set.

Notes

Use thin bacon slices for easier wrapping and crispier results. Remove jalapeño seeds and membranes for less heat. Use a wire rack to allow bacon fat to drip away for crispier bacon.
