  • 1 cup panko breadcrumbs
  • ½ cup grated parmesan cheese
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano (optional)
  • Olive oil spray

Instructions

  1. Prep the chicken: Trim excess fat from chicken breasts, slice lengthwise into 1-inch strips. Pound to ½ inch thickness if needed. Pat dry with paper towels.
  2. Set up breading station: In bowl 1, whisk flour, garlic powder, onion powder, paprika, salt, pepper, and oregano. In bowl 2, beat eggs with 1 tablespoon water. In bowl 3, combine panko and parmesan cheese.
  3. Coat the chicken: Dredge each strip in flour, shake off excess. Dip in egg wash, let excess drip. Press into panko-parmesan mixture until fully coated. Place on a plate.
  4. Preheat air fryer to 400°F for 3-5 minutes.
  5. Lightly spray air fryer basket with oil. Arrange tenders in a single layer without touching.
  6. Spray tops with oil. Air fry at 400°F for 8 minutes. Flip, spray other side, and cook 4-6 more minutes until golden and internal temperature reaches 165°F.
  7. Transfer to a wire rack and let rest 2-3 minutes before serving.
