  • 2 cans (28 oz each) whole peeled tomatoes (preferably San Marzano)
  • 1 medium yellow onion, roughly chopped
  • 4 cloves garlic, smashed
  • 2 tablespoons olive oil
  • 1 cup fresh basil leaves, packed
  • 1 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 2 cups vegetable broth (or chicken broth)
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • Salt and black pepper to taste (about 1 teaspoon salt and 1/2 teaspoon pepper)
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh Parmesan cheese for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Drain the canned tomatoes, reserving the juice. Spread the whole tomatoes on the baking sheet along with the chopped onion and smashed garlic cloves. Drizzle with olive oil, toss to coat, and season with a pinch of salt and pepper. Roast for 20-25 minutes until the tomatoes caramelize and the onions are soft and golden.
  3. While the vegetables roast, heat your pot over medium heat. Add a splash of olive oil and the tomato paste. Cook the tomato paste for about 2 minutes, stirring constantly, until it darkens and smells rich.
  4. Add the roasted vegetables to the pot, scraping every bit from the baking sheet. Pour in the reserved tomato juice and the vegetable broth. Bring to a simmer and cook for 10 minutes.
  5. Add the fresh basil, tearing the leaves roughly with your hands. Stir and let wilt for about 2 minutes.
  6. Blend the soup until smooth using an immersion blender directly in the pot, or carefully in batches in a countertop blender.
  7. Reduce heat to low and slowly stir in the heavy cream. Add the sugar, red pepper flakes (if using), and season with salt and pepper to taste. Let warm through for about 5 minutes, but do not let it boil.
  8. Taste and adjust seasoning as needed. Serve hot with a swirl of cream, fresh basil ribbons, and grated Parmesan cheese.

Notes

Don’t skip the roasting step—it deepens the tomato flavor. Let cream come to room temperature before adding to prevent curdling. Season in layers for best flavor. Blend thoroughly for a silky texture. Taste and adjust seasoning at the end.
