A quick and easy single-serving overnight oats recipe that combines creamy cream cheese with fresh strawberries for a delicious, cheesecake-inspired breakfast.

Ingredients

Scale
  • ½ cup (45g) old-fashioned rolled oats
  • 2 tablespoons (30g) cream cheese, softened
  • ½ cup (120ml) milk (whole or plant-based)
  • ⅓ cup (50g) fresh strawberries, chopped
  • 1 teaspoon (7g) honey
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Soften the cream cheese by leaving it at room temperature for about 10 minutes.
  2. In a mason jar or bowl, whisk together the softened cream cheese and ½ cup milk until smooth and creamy.
  3. Stir in ½ cup rolled oats and 1 teaspoon chia seeds if using, mixing well to coat the oats.
  4. Add 1 teaspoon honey, ½ teaspoon vanilla extract, and 1 teaspoon lemon zest if desired. Stir evenly.
  5. Gently fold in ⅓ cup chopped fresh strawberries, or add them in the morning if preferred.
  6. Seal the jar or bowl tightly and refrigerate overnight or for at least 6 hours.
  7. In the morning, stir the oats and add a splash of milk if the mixture is too thick. Top with extra strawberries, honey, or nuts if desired.

Notes

Soften cream cheese before mixing to avoid lumps. Overnight soaking (at least 6 hours) is key for creamy texture. Adjust thickness in the morning with extra milk. Use fresh or frozen strawberries (thawed and drained). Optional ingredients like lemon zest and chia seeds enhance flavor and texture.
