  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 cup sour cream (full-fat)
  • 2 tbsp all-purpose flour (or cornstarch for gluten-free)
  • Salt and black pepper, to taste
  • 12 oz tender egg noodles

Instructions

  1. Trim excess fat from the chuck roast and slice into 1-inch strips. Pat dry with paper towels.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef in batches for 3-4 minutes per batch. Transfer browned beef to slow cooker.
  3. In the same skillet, sauté diced onions until translucent, about 5 minutes. Add sliced mushrooms and minced garlic; cook another 5 minutes until softened. Transfer to slow cooker.
  4. Add beef broth, Dijon mustard, Worcestershire sauce, salt, and pepper to slow cooker. Stir gently to combine.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until beef is tender and sauce thickened.
  6. About 15 minutes before beef is done, cook egg noodles in salted boiling water according to package instructions (6-8 minutes). Drain and keep warm.
  7. Whisk flour with a little cold water to make a slurry. Stir into slow cooker sauce and cook on HIGH for 15-20 minutes to thicken.
  8. Turn off slow cooker and gently stir in sour cream until sauce is creamy and smooth. Avoid boiling after adding sour cream.
  9. Serve beef stroganoff over egg noodles, garnish with fresh parsley if desired.
