  • 1 whole head of garlic
  • 12 tablespoons olive oil (for roasting garlic)
  • 2 tablespoons unsalted butter or olive oil
  • 1 medium onion, diced
  • 23 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 (28-ounce) cans whole peeled San Marzano tomatoes or 4 cups fresh tomatoes, roughly chopped
  • 3 cups vegetable or chicken broth
  • 1/2 cup heavy cream or full-fat coconut milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried basil or 1 tablespoon fresh, chopped (optional)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh basil leaves or parsley for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose cloves. Drizzle with 1-2 tablespoons olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden. Set aside to cool.
  2. While garlic roasts, dice onion, chop carrots and celery (about 10 minutes).
  3. In a large pot or Dutch oven, heat 2 tablespoons unsalted butter or olive oil over medium heat. Add onion, carrots, and celery. Cook, stirring occasionally, until softened and fragrant, about 8-10 minutes.
  4. Add canned tomatoes with juices (crush lightly) or fresh tomatoes. Pour in 3 cups broth and stir to combine.
  5. Squeeze roasted garlic cloves out of skins into pot. Add salt, pepper, basil, and red pepper flakes if using. Stir well.
  6. Bring soup to a gentle boil, then reduce heat and simmer uncovered for 20-25 minutes, stirring occasionally.
  7. Use an immersion blender to puree soup until smooth and creamy. Alternatively, blend in batches in a regular blender carefully.
  8. Stir in 1/2 cup heavy cream or coconut milk. Heat gently for 3-5 minutes without boiling.
  9. Taste and adjust seasoning with more salt or pepper if needed.
  10. Ladle soup into bowls, garnish with fresh basil or parsley and Parmesan if desired. Serve warm with crusty bread or grilled cheese.

Notes

Avoid over-roasting garlic to prevent bitterness; roast until soft and golden. Use San Marzano canned tomatoes for best flavor. For dairy-free version, substitute cream with coconut milk or cashew cream. Blend soup carefully to avoid pressure build-up. Add cream at the end and do not boil after adding to prevent curdling. A splash of balsamic vinegar or lemon juice can brighten the flavor if soup tastes flat.
