  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 2 to 4 tablespoons water, to adjust consistency
  • 1 teaspoon salt, or to taste
  • ½ teaspoon ground cumin (optional)
  • Pinch of freshly ground black pepper
  • 1 small garlic clove, minced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Trim the ends and roughly chop about 1 cup of garlic scapes. Toss them with 1 tablespoon of olive oil and a pinch of salt. Spread evenly on the baking sheet.
  3. Roast the garlic scapes for 10-12 minutes until softened and slightly caramelized, smelling nutty and sweet but not burnt.
  4. While the scapes roast, drain and rinse the chickpeas. Optionally peel a few chickpeas for creamier texture.
  5. In a food processor, combine roasted garlic scapes, chickpeas, tahini, lemon juice, minced garlic (if using), cumin, salt, pepper, and 1 tablespoon olive oil. Blend until smooth, about 1-2 minutes, scraping down sides as needed.
  6. Add water one tablespoon at a time, blending between additions until desired creamy consistency is reached (usually about 3 tablespoons).
  7. Taste and adjust seasoning with more salt, lemon juice, or olive oil if needed.
  8. Transfer hummus to a serving bowl. Drizzle with extra olive oil and sprinkle with cumin or paprika if desired. Garnish with fresh herbs like parsley or cilantro.

Notes

Roasting garlic scapes is essential to mellow their flavor and add sweetness. Avoid over-roasting to prevent bitterness. For extra silky texture, add a splash of aquafaba. Peel chickpeas for creamier hummus if desired. Use fresh lemon juice for best flavor. Store in airtight container in fridge up to 5 days; flavors improve overnight. Stir in water or olive oil if hummus thickens.
