  • 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (64g) creamy peanut butter
  • 3 tablespoons (45g) chocolate chips (semi-sweet or dark)
  • 2 tablespoons (30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • 1/8 teaspoon salt
  • Optional toppings: sliced banana, extra peanut butter drizzle, more chocolate chips, flaky sea salt, Greek yogurt

Instructions

  1. In a jar or container, combine 1 cup old-fashioned rolled oats and 1 tablespoon chia seeds. Stir to distribute.
  2. In a small bowl or directly in the jar, combine 1 cup milk, 1/4 cup creamy peanut butter, 2 tablespoons maple syrup or honey, and 1 teaspoon vanilla extract. Whisk until peanut butter is mostly incorporated.
  3. Pour the wet mixture over the oats and chia seeds. Add a tiny pinch of salt. Stir thoroughly until well combined.
  4. Fold in 3 tablespoons chocolate chips. Reserve a few for topping if desired.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, check consistency. If too thick, stir in a splash of milk.
  7. Add toppings and serve cold or warm.

Notes

For best results, use old-fashioned rolled oats, not quick or steel-cut oats. Chia seeds are key for creamy texture. Let peanut butter come to room temperature for easier mixing. Taste and adjust sweetness/salt before refrigerating. Oats keep in fridge for up to 5 days; do not freeze.
