These creamy overnight peanut butter banana oats are the perfect make-ahead breakfast. With just five minutes of prep, you get a thick, pudding-like texture that tastes like dessert but fuels your morning.

Ingredients

  • 1/2 cup (45g) rolled oats
  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (30g) creamy peanut butter
  • 1 medium ripe banana, sliced
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mash half of the sliced banana in a mason jar or container until mostly smooth with a few small chunks.
  2. Add milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract (if using). Stir until peanut butter is fully incorporated.
  3. Stir in rolled oats, chia seeds (if using), and a pinch of salt. Mix until evenly combined.
  4. Top with remaining banana slices, pressing them down gently so they are partially submerged.
  5. Cover and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir well. If too thick, add a splash of milk. Enjoy cold or microwave for 45-60 seconds for warm oats.

Notes

For extra thick oats, add another tablespoon of chia seeds. For thinner consistency, use 2/3 cup milk. Make multiple jars for up to 4 days of meal prep. Leave banana topping off until ready to eat to prevent browning.
