  • 1 ripe banana (the riper, the better)
  • 2 tablespoons creamy peanut butter (natural, no added sugar or oil)
  • 1/2 cup milk of your choice (whole milk, oat milk, almond milk, or coconut milk)
  • 1 tablespoon maple syrup or honey (optional, depending on sweetness of banana)
  • 1 tablespoon chia seeds (optional but recommended)
  • 1 pinch salt
  • 1/4 teaspoon vanilla extract (optional)
  • 2 tablespoons Greek yogurt (optional for extra creaminess)

Instructions

  1. Mash the banana first. In a small bowl or directly in your jar, mash the ripe banana with a fork until mostly smooth. A few small lumps are fine.
  2. Warm the peanut butter slightly. If thick and stiff, microwave for about 10 seconds or set the jar in a bowl of warm water for a minute.
  3. Combine the wet ingredients. Add the mashed banana, warmed peanut butter, milk, maple syrup (if using), vanilla extract, and Greek yogurt (if using) to the jar. Stir or whisk until well combined and smooth.
  4. Add the dry ingredients. Pour in the rolled oats, chia seeds, and a pinch of salt. Stir until the oats are fully coated and no dry oats remain at the bottom.
  5. Seal and shake. Put the lid on the jar and shake vigorously, or stir well if using a container without a tight lid.
  6. Refrigerate overnight (or at least 6 hours). Place the jar in the fridge and let it sit for at least 6 hours, ideally 8-12 hours.
  7. Stir before serving. In the morning, stir the oats. If too thick, add a splash of milk and stir until desired consistency.
  8. Add toppings and enjoy. Top with sliced banana, a drizzle of peanut butter, chia seeds, chopped nuts, or fresh berries. Eat cold or let sit at room temperature for 10 minutes.

Notes

Mash the banana thoroughly for even flavor. Use rolled oats for best texture; quick oats become mushy, steel-cut oats stay crunchy. Let oats rest at least 6 hours. Adjust liquid to preference. Do not skip the salt. For meal prep, make up to 4 jars at once; store in fridge up to 4 days. Toppings can be added just before serving.
