  • 1 ½ cups (300g) arborio rice
  • 1 cup (240ml) pumpkin puree (canned or fresh roasted)
  • 810 fresh sage leaves
  • 4 cups (960ml) vegetable broth, kept warm
  • 3 tablespoons (45g) unsalted butter (or olive oil for dairy-free)
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • ½ cup (50g) grated Parmesan cheese (or nutritional yeast for dairy-free)
  • ¼ cup (60ml) white wine (optional, can substitute with extra broth)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Warm the vegetable broth in a small saucepan over low heat and keep it simmering.
  2. In a large heavy-bottomed skillet, melt 2 tablespoons (30g) of butter over medium heat. Add the chopped onion and cook for 3-4 minutes until translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in fresh sage leaves and cook for 1-2 minutes until slightly crisp.
  5. Add arborio rice and toast for 2 minutes, stirring often until edges look translucent.
  6. Pour in white wine (if using) and stir until mostly absorbed, about 1-2 minutes. If skipping wine, add an extra ¼ cup broth instead.
  7. Stir in pumpkin puree until evenly mixed with the rice.
  8. Add warm broth gradually, about ½ cup (120ml) at a time, stirring gently and waiting until most liquid is absorbed before adding more. Continue for 18-20 minutes until rice is tender but al dente.
  9. Remove from heat and stir in remaining 1 tablespoon (15g) butter and grated Parmesan cheese.
  10. Season with salt and pepper to taste. If risotto is too thick, add a splash of broth or water to loosen.
  11. Let rest for 1-2 minutes before serving. Garnish with fresh sage leaves or extra Parmesan if desired.

Notes

Keep broth warm to ensure even cooking and creamy texture. Stir gently but frequently to release rice starch without breaking grains. Toasting rice adds nuttiness. Adjust seasoning gradually as broth and cheese add saltiness. For dairy-free, substitute butter with olive oil and Parmesan with nutritional yeast. Fresh sage is preferred over dried for best flavor.
