Creamy One-Pot Pumpkin Gnocchi in 15 Minutes

A quick and easy weeknight dinner featuring pillowy gnocchi cooked directly in a velvety pumpkin cream sauce. Ready in just 15 minutes with one pot and simple ingredients.

  • 1 package (16-17 oz) shelf-stable potato gnocchi
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup vegetable or chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon ground sage
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • Fresh parsley or sage leaves for garnish (optional)

Instructions

  1. Place a large skillet or Dutch oven over medium heat and melt 2 tablespoons of butter. Add 3 minced garlic cloves and sauté for 30-60 seconds until fragrant and just barely golden.
  2. Pour in 1 cup pumpkin puree and 1 cup heavy cream. Stir until smooth and uniform. Add 1/2 cup broth and stir again. Bring to a gentle simmer (about 1-2 minutes).
  3. Add 1/2 teaspoon ground sage, 1/4 teaspoon ground nutmeg, 1/4 teaspoon red pepper flakes (if using), 1/2 teaspoon salt, and black pepper to taste. Stir to combine.
  4. Add the entire package of gnocchi directly to the sauce. Stir gently to coat. Cover and cook for 5 minutes. Remove lid, stir gently, then re-cover and cook for another 3-5 minutes until gnocchi are tender.
  5. Remove from heat. Sprinkle in 1/2 cup grated Parmesan cheese and stir gently until melted. If sauce is too thick, add a splash more broth or cream.
  6. Let rest for 1 minute off the heat. Stir once more, then ladle into bowls. Garnish with fresh parsley or sage leaves if desired. Serve immediately.

Notes

For best results, use shelf-stable gnocchi (not fresh). Do not over-stir the gnocchi to avoid a gummy texture. Toast the spices in the butter for extra depth. Keep heat at medium or medium-low to prevent cream from curdling. Use room temperature cream for smoother sauce.
