A rich, tangy, and velvety one-pot chicken soup with sun-dried tomatoes and cream. This easy, crowd-pleasing recipe is perfect for weeknights or dinner parties.

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup sun-dried tomatoes in oil, drained and roughly chopped
  • 1 cup (240ml) heavy cream
  • 4 cups (960ml) low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 3 cups (90g) fresh spinach
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Prep your ingredients first: dice the onion, mince the garlic, drain and roughly chop the sun-dried tomatoes, and cut the chicken into 1-inch cubes.
  2. Heat the olive oil in a Dutch oven over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  3. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the chicken pieces to the pot. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook for 5-6 minutes, turning occasionally, until golden on the outside but not fully cooked through.
  5. Stir in the sun-dried tomatoes, thyme, oregano, and red pepper flakes (if using). Cook for 1 minute.
  6. Pour in the chicken broth and bring to a gentle boil. Scrape up any browned bits from the bottom of the pot.
  7. Reduce heat to low and let the soup simmer uncovered for 15 minutes.
  8. Lower the heat to the lowest setting and stir in the heavy cream until fully incorporated.
  9. Add the grated Parmesan cheese a handful at a time, stirring after each addition.
  10. Toss in the fresh spinach and stir until wilted, about 2 minutes.
  11. Taste and adjust seasoning with more salt, pepper, or red pepper flakes as needed.
  12. Serve immediately with crusty bread or a simple side salad. Garnish with extra Parmesan and fresh thyme if desired.

Notes

Don’t boil the cream—add it on low heat to prevent curdling. Season in layers for best flavor. The soup tastes even better the next day. For a dairy-free version, use full-fat coconut cream and nutritional yeast instead of Parmesan.
