Instructions

  1. Soften the cream cheese: Take cream cheese out of refrigerator 20 minutes before starting. Cut into cubes for faster softening.
  2. Shred the chicken: If using rotisserie chicken, remove skin and bones, then shred with two forks. Aim for 2 cups of bite-sized pieces.
  3. Slice the green onions: Cut into thin rounds, separating white parts from green tops. Reserve green tops for garnish.
  4. Melt the cream cheese: Place a large skillet over medium-low heat. Add cubed cream cheese and stir gently until completely smooth and creamy, about 3-4 minutes.
  5. Add hot sauce and seasonings: Pour in hot sauce, ranch dressing mix, garlic powder, and celery salt. Stir until well combined. Cook for 2 minutes, stirring constantly.
  6. Add shredded cheese: Reduce heat to low. Gradually add shredded cheddar and Monterey Jack cheese, one handful at a time, stirring until each addition is fully melted before adding the next.
  7. Fold in chicken and white parts of green onions: Add shredded chicken and white parts of green onions. Stir gently until evenly distributed and heated through, about 2-3 minutes.
  8. Finish with blue cheese and garnish: If using blue cheese crumbles, gently fold them in at the end. Transfer to a serving bowl and top with reserved green onion slices and extra blue cheese crumbles if desired.
