Creamy Instant Pot Tomato Basil Soup

A quick and easy creamy tomato basil soup made in the Instant Pot, featuring fresh tomatoes, basil, and cottage cheese for a silky texture without heaviness. Perfect for cozy nights and busy weeknights.

  • 6 cups fresh ripe tomatoes, chopped (about 1.4 kg or 3 lbs)
  • 1 medium yellow onion, diced
  • 3 large garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 3 cups vegetable broth (720 ml)
  • 1 cup cottage cheese (240 ml), small curd preferred
  • 1 cup fresh basil leaves, tightly packed, torn roughly
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes
  • Optional garnishes: extra fresh basil leaves, drizzle of olive oil or cream, croutons or toasted bread

Instructions

  1. Set Instant Pot to ‘Sauté’ mode. Add 2 tablespoons olive oil and diced onion. Cook, stirring occasionally, until onion is soft and translucent, about 5 minutes.
  2. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Add chopped tomatoes and 3 cups vegetable broth. Season with 1 teaspoon salt and ½ teaspoon black pepper. Stir to combine.
  4. Seal Instant Pot lid and set to manual high pressure for 15 minutes. Allow natural pressure release for 10 minutes, then quick-release remaining steam.
  5. Use an immersion blender to puree soup directly in the pot until smooth and creamy. If using a regular blender, cool soup slightly and blend in batches.
  6. Stir in 1 cup cottage cheese and fresh basil leaves. Blend again with immersion blender until fully incorporated and silky smooth. Adjust seasoning with salt and pepper as needed.
  7. Switch Instant Pot back to ‘Sauté’ mode and simmer gently for 5 minutes, stirring frequently to meld flavors and thicken soup slightly.
  8. Ladle soup into bowls and garnish with extra basil leaves or a drizzle of olive oil. Serve with crusty bread or grilled cheese sandwich.

Notes

If soup is too thick, add a splash of broth or water to loosen. If too thin, simmer uncovered longer to reduce. Use natural pressure release to avoid watery tomatoes. Add sugar if soup tastes too acidic. Blend cottage cheese cold to avoid graininess. Fresh basil should be added at the end to preserve flavor.
