  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 tablespoons butter, melted (or coconut oil for dairy-free)
  • Cinnamon swirl: 2 tablespoons brown sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking dish with butter or non-stick spray to prevent sticking.
  2. In a medium bowl, whisk together rolled oats, baking powder, ground cinnamon, brown sugar, and salt until evenly combined.
  3. In another bowl, beat the egg with milk, Greek yogurt, vanilla extract, and melted butter until smooth and slightly thick.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.
  5. Pour the batter evenly into the prepared baking dish. Sprinkle the cinnamon-sugar swirl mixture on top and gently press it into the batter with the back of a spoon for a marbled effect.
