  • 8 large eggs, room temperature
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 pound cooked breakfast sausage (optional)
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives or parsley, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  3. Cook the sausage (if using) in a skillet over medium heat until crumbled and cooked through. Drain excess fat and set aside.
  4. Using the same skillet, sauté the finely chopped onion until translucent and slightly caramelized, about 5 minutes.
  5. In a large bowl, whisk together the eggs, milk, and sour cream until smooth and creamy.
  6. Stir in garlic powder, salt, and black pepper.
  7. Fold in shredded cheddar cheese, cooked sausage, and sautéed onions into the egg mixture.
  8. Spread half of the frozen tater tots evenly in the bottom of the prepared baking dish.
  9. Pour half of the egg mixture over the tater tots, spreading gently.
  10. Repeat with the remaining tater tots and egg mixture.
  11. Bake uncovered for 40-45 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
  12. Let the casserole rest for 5-10 minutes before slicing.
  13. Sprinkle with fresh chopped chives or parsley before serving.

Notes

Do not thaw tater tots before baking to keep them crispy. Use room temperature eggs for a creamy custard base. Drain excess sausage fat to avoid an oily casserole. Tent with foil if the top browns too quickly. Prepare the casserole the night before and bake fresh in the morning for deeper flavors.
