A warm and comforting pear crisp featuring spiced, tender pears topped with a crunchy oat crumble. Perfect for cozy nights and simple to make with pantry staples.

Ingredients

Scale
  • 45 ripe pears, peeled, cored, and sliced (about 3 cups) – Bartlett or Bosc
  • 2 tablespoons granulated sugar (adjust based on pear sweetness)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/3 cup light brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and diced
  • Optional: 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, toss the sliced pears with granulated sugar, cinnamon, nutmeg, ginger, lemon juice, and cornstarch until evenly coated. Set aside for 5 minutes to macerate.
  3. In a large bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Add the cold diced butter and work it into the dry ingredients using a pastry cutter or fingers until the mixture resembles coarse crumbs with some pea-sized bits. Fold in chopped nuts if using.
  4. Pour the pear mixture into a 9-inch baking dish, spreading evenly. Sprinkle the oat crumble evenly over the pears, covering completely.
  5. Bake for 35-40 minutes until the fruit is bubbling around the edges and the topping is golden brown and crisp. Tent with foil halfway through if topping browns too quickly.
  6. Let the crisp rest for 10-15 minutes before serving to allow juices to thicken.

Notes

Keep butter cold for a flaky crumble topping. Use firm pears like Bosc for best texture. Cornstarch is essential to thicken juices and prevent sogginess. Tent with foil if topping browns too fast. Can substitute almond flour for gluten-free version and coconut oil for dairy-free. Leftovers store well refrigerated for 3 days and freeze up to 2 months.
