  • ¼ cup (50g) packed light brown sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ½ cup (85g) semi-sweet chocolate chips
  • Flaky sea salt for sprinkling (optional)
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a microwave-safe bowl in 20-second bursts until just melted. Let cool for a minute or two.
  3. In a medium mixing bowl, whisk together the melted butter, granulated sugar, and packed light brown sugar until smooth and glossy, about 30 seconds.
  4. Add the egg yolk and vanilla extract. Whisk vigorously until fully combined and slightly lighter in color, about 1 minute.
  5. In a small bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Add the flour mixture to the butter mixture. Use a rubber spatula to fold together gently until no streaks of flour remain. Do not overmix.
  7. Fold in the chocolate chips (and nuts if using). The dough will be thick and slightly sticky.
  8. Scoop the dough into 6 equal balls, about 1.5 tablespoons each. Place them on the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 10 to 12 minutes, until edges are golden brown and centers are still soft and puffy. If using flaky sea salt, sprinkle on top immediately after removing from oven.
