  • 2 tablespoons (25g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • ⅓ cup (43g) all-purpose flour
  • ¼ cup (21g) unsweetened cocoa powder, preferably Dutch-processed
  • ⅛ teaspoon salt
  • ⅓ cup (35g) chopped walnuts, toasted

Instructions

  1. Preheat your oven to 325°F (163°C). Grease your small baking pan lightly with butter or non-stick spray.
  2. Toast the walnuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently. Set aside to cool.
  3. Mix the melted butter with both sugars in a medium bowl until smooth and glossy.
  4. Add the egg and vanilla extract to the butter-sugar mix. Whisk until just combined.
  5. In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt.
  6. Fold the dry ingredients gently into the wet mixture using a spatula until no flour pockets remain.
  7. Fold in most of the toasted walnuts, reserving a few to sprinkle on top.
  8. Spread the batter evenly in your prepared pan. Smooth the top and sprinkle the remaining walnuts over.
  9. Bake for 18-22 minutes, checking at 18 minutes. The edges should be set but the center slightly soft with moist crumbs on a toothpick.
  10. Cool in the pan on a wire rack for at least 15 minutes before slicing.
