Cozy Slow Cooker Chicken and Dumplings

  • 3 cups cooked, shredded rotisserie chicken or boneless skinless chicken breasts (about 1.5 lbs raw)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 small onion, finely chopped
  • 4 cups low-sodium chicken broth
  • 1 can refrigerated biscuit dough (10 count), torn or cut into bite-sized pieces
  • ½ cup heavy cream or half-and-half
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter

Instructions

  1. Dice carrots, celery, and onion into small, even pieces (about 5 minutes).
  2. In a medium pan, melt 2 tablespoons of unsalted butter over medium heat. Add the carrots, celery, and onion, cooking until softened and fragrant (about 5-7 minutes).
  3. Sprinkle 2 tablespoons of all-purpose flour over the sautéed vegetables and stir continuously for 1-2 minutes to cook out the raw flour taste.
  4. Transfer the sautéed vegetables and flour mixture into the slow cooker. Add 4 cups chicken broth, dried thyme, dried parsley, bay leaf, salt, and pepper. Stir gently to combine.
  5. Add shredded rotisserie chicken or raw chicken breasts to the slow cooker.
  6. Cover and cook on low for 5 hours or on high for 3 hours. If using raw chicken breasts, shred them with two forks in the last 30 minutes of cooking.
  7. About 30 minutes before serving, stir in ½ cup heavy cream and tear biscuit dough into bite-sized pieces, dropping them on top of the simmering broth.
  8. Cover and continue cooking on high for 25-30 minutes, until dumplings are puffed up and cooked through.
  9. Remove bay leaf, taste and adjust seasoning with salt and pepper, and gently stir.
  10. Ladle the chicken and dumplings into bowls and serve immediately.

Notes

If the broth is too thick after adding cream, stir in a splash of chicken broth or water to loosen it. Do not add dumplings too early to avoid sogginess; add them in the last 30 minutes. Sautéing vegetables first enhances flavor. For gluten-free, substitute biscuit dough with gluten-free biscuits and ensure broth is gluten-free. For dairy-free, substitute cream with coconut or almond milk.
