This cozy roasted delicata squash with hot honey and feta is a quick and easy fall dish featuring caramelized squash, creamy feta, and a sweet-spicy hot honey drizzle. Perfect for weeknight dinners or holiday gatherings.

Ingredients

Scale
  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 3 tablespoons honey
  • ½ to 1 teaspoon red pepper flakes
  • 1 teaspoon apple cider vinegar
  • Pinch of salt
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons fresh parsley or mint, chopped (optional)
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 425°F (220°C). Place a rack in the middle position.
  2. Wash the delicata squash thoroughly. Cut off both ends, slice in half lengthwise, and scoop out the seeds. Cut each half into ½-inch thick half-moons.
  3. In a large mixing bowl, combine the sliced squash with olive oil, kosher salt, black pepper, and garlic powder. Toss gently with your hands until every piece is coated.
  4. Line a baking sheet with parchment paper. Spread the squash pieces in a single layer, making sure they are not touching. Use two baking sheets if needed.
  5. Roast for 20 minutes, flipping the pieces halfway through (after 10 minutes). The squash should be tender when pierced with a fork and the edges golden brown and slightly crispy.
  6. While the squash roasts, combine honey, red pepper flakes, apple cider vinegar, and a pinch of salt in a small saucepan. Warm over low heat for 2-3 minutes, stirring occasionally. Do not let it boil. Remove from heat and let it sit.
  7. Transfer the roasted squash to a serving platter. Crumble the feta cheese evenly over the top while the squash is still warm. Drizzle the hot honey over everything, starting with about half and adding more to taste.
  8. Sprinkle with fresh chopped parsley or mint if using, and finish with a pinch of flaky sea salt. Serve immediately.

Notes

For best caramelization, make sure the squash is dry before seasoning and do not overcrowd the pan. The hot honey can be made up to a week in advance and stored at room temperature. Leftovers can be refrigerated for up to 3 days; reheat in a 350°F oven for about 10 minutes.
