Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (180g) pumpkin puree
  • 4 oz (113g) cream cheese, softened
  • ¼ cup (57g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar
  • 2 tablespoons pure maple syrup
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (optional)
  • 1 tablespoon pumpkin seeds (optional)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
  4. Beat in egg and vanilla extract until combined. Add pumpkin puree and beat on low until just incorporated.
  5. Gradually add dry ingredients to wet mixture, mixing on low until just combined. Do not overmix.
  6. Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes, until edges are golden and a toothpick inserted in center comes out clean or with a few moist crumbs.
  7. Let cool in pan on a wire rack for 15 minutes, then invert onto rack, peel off parchment, and cool completely.
  8. For frosting: Beat softened cream cheese and butter together until smooth, about 2 minutes. Add powdered sugar, maple syrup, and salt. Beat on low until combined, then on medium-high for 2 minutes until fluffy.
  9. Spread frosting over completely cooled cookie cake. Sprinkle with pecans, pumpkin seeds, and flaky sea salt if desired.

Notes

Don’t overmix the batter. Use room temperature ingredients. Let cake cool completely before frosting. Toast nuts for extra flavor.
