  • 12 teaspoons maple syrup or brown sugar (optional, for sweetness)
  • ¼ cup heavy cream (or full-fat coconut cream for dairy-free)
  • 2 tablespoons pumpkin purée (not pumpkin pie filling)
  • 1 tablespoon maple syrup (or honey, or agave)
  • ¼ teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract (pure vanilla)
  • Pinch of salt

Instructions

  1. Brew 1 cup of strong coffee. If desired, stir in 1-2 teaspoons of maple syrup or brown sugar while hot.
  2. In a small bowl or wide-mouth jar, combine heavy cream, pumpkin purée, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt. Stir until smooth and uniform.
  3. Froth the mixture using a handheld milk frother for 30-45 seconds until doubled in volume and soft peaks form. Alternatively, shake in a sealed jar for 30 seconds, microwave for 15 seconds, then shake again for 15 seconds.
  4. Pour the coffee into a mug, leaving about an inch of space at the top. Gently spoon the pumpkin cold foam over the back of a spoon to float on top.
  5. Sprinkle a pinch of pumpkin pie spice or cinnamon on top. Serve immediately.

Notes

For best foam, use cold heavy cream straight from the fridge. If using coconut cream, chill the can overnight. Don’t skip the pinch of salt—it balances sweetness and enhances flavors. The pumpkin cream base can be stored in the fridge for up to 3 days; stir well before frothing.
