  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • 1 cup (175g) semi-sweet chocolate chips (reserve 1 tablespoon for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the dry ingredients: flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Break up any lumps of brown sugar.
  3. In a medium bowl, whisk together the wet ingredients: pumpkin puree, vegetable oil, eggs, vanilla extract, and milk until smooth. Let sit for 2-3 minutes.
  4. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together gently until just combined (a few lumps are fine). Do not overmix.
  5. Fold in the chocolate chips (reserving about 1 tablespoon for topping) with a few gentle strokes.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle the reserved chocolate chips on top.
  7. Bake for 18-22 minutes, rotating the pan halfway through. Muffins are done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Wait at least 10 minutes before eating.
