  • 2 chai tea bags (e.g., Tazo or Stash)
  • 1/2 cup water
  • 1 1/2 cups oat milk (barista blend preferred for frothing)
  • Optional: extra oat milk for frothing
  • Optional garnish: cinnamon or pumpkin pie spice, whipped cream, caramel or maple syrup drizzle

Instructions

  1. Steep the chai tea: In a small saucepan, bring 1/2 cup water to a gentle boil. Remove from heat, add 2 chai tea bags, and steep for 5 minutes (or up to 7 minutes for stronger flavor). Remove tea bags, squeezing out excess liquid. Set aside.
  2. Make the pumpkin base: In a small bowl, combine 2 tablespoons pumpkin puree, 1 tablespoon hot water, 1 teaspoon pumpkin pie spice, 1 tablespoon maple syrup, and 1/2 teaspoon vanilla extract. Whisk until smooth.
  3. Heat the oat milk: In the same saucepan (rinsed), add 1 1/2 cups oat milk. Heat over medium-low heat, whisking occasionally, until steaming but not boiling (small bubbles around edges). Do not let it boil.
  4. Combine everything: Whisk the pumpkin base into the hot oat milk until fully incorporated. Pour in the steeped chai concentrate and stir gently until combined and warm orange-brown in color. Adjust sweetness or spice to taste.
  5. Froth the milk (optional): If desired, froth an extra 1/4 cup oat milk using a milk frother, whisk, or shake in a jar. Pour latte into a mug and spoon foam on top.
  6. Garnish and serve: Sprinkle with cinnamon or pumpkin pie spice. Add whipped cream or a drizzle of maple syrup if desired. Serve immediately.

Notes

For a smoother texture, blend the pumpkin puree with hot water before adding to milk. Use barista blend oat milk for better froth. The pumpkin base can be made ahead and stored in the fridge for up to 5 days. For an iced version, steep chai, make pumpkin base, and pour over ice with cold oat milk.
