  • 8 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides. Lightly grease the parchment.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 3 to 4 minutes. Scrape down the sides halfway through.
  4. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.
  5. Add the pumpkin puree and sour cream to the wet mixture. Beat on low speed until just combined.
  6. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding with a rubber spatula until just combined. Do not overmix.
  7. Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 25 to 30 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. Cool in the pan on a wire rack for 15 minutes, then lift out and cool completely.
  9. While the bars cool, make the frosting: Beat the softened cream cheese and butter together on medium speed until smooth and creamy, about 2 minutes. Add vanilla and a pinch of salt, then gradually add the sifted powdered sugar, beating on low until incorporated. Increase speed to medium-high and beat for 1 minute until light and fluffy.
  10. Spread the frosting evenly over the completely cooled bars. Chill in the refrigerator for at least 30 minutes before slicing. Use a sharp knife, wiping clean between cuts.
