  • 1 cup (245g) pumpkin puree
  • 1 cup (240ml) milk (any kind)
  • 2 large eggs, room temperature
  • 1/3 cup (80ml) pure maple syrup
  • 3 tablespoons (45g) coconut oil or butter, melted and slightly cooled
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional mix-ins: 1/2 cup chocolate chips, chopped pecans, or dried cranberries

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, combine rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. Stir until evenly distributed.
  3. In a separate medium bowl, whisk together pumpkin puree, milk, eggs, maple syrup, melted coconut oil (or butter), and vanilla extract until smooth and uniform in color.
  4. Pour wet ingredients into dry ingredients. Stir gently with a spatula until just combined; a few streaks of dry oats are fine. Do not overmix.
  5. Let the mixture rest for 10 minutes to allow oats to absorb liquid.
  6. If using mix-ins, gently fold them in after the rest. Reserve a few to sprinkle on top.
  7. Scoop mixture evenly into the prepared muffin cups, filling almost to the top (about 1/3 cup each). Sprinkle reserved mix-ins on top.
  8. Bake for 18-22 minutes, until tops are set and golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 18 minutes.
  9. Let cups cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
