Instructions

  1. Prepare the Peach Filling: In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, cornstarch, and a pinch of salt. Toss gently until the peaches are evenly coated. Let sit while preparing biscuits.
  2. Preheat oven to 375°F (190°C) and position rack in the middle.
  3. Brown the Butter: Place 6 tablespoons unsalted butter in a light-colored skillet over medium heat. Swirl frequently until it foams, turns golden brown, and smells nutty. Remove from heat and let cool slightly.
  4. Make Biscuit Dough: In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar. Pour browned butter into dry ingredients and stir until combined. Add buttermilk and mix gently until just incorporated.
  5. Assemble Cobbler: Transfer peach mixture into baking dish or skillet, spreading evenly. Drop spoonfuls of biscuit dough on top, spacing them out but allowing some to touch.
