Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 medium carrots, peeled and diced (about 1 ½ cups)
  • 3 celery stalks, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 bay leaf
  • 8 cups (2 liters) low-sodium chicken broth
  • 1 ½ pounds (680g) boneless, skinless chicken thighs
  • 8 ounces (225g) wide egg noodles
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat the olive oil in a large Dutch oven over medium heat until shimmering.
  2. Add the diced onion, carrots, and celery. Cook, stirring occasionally, for 6-8 minutes until softened and the onion is translucent.
  3. Add the minced garlic, dried thyme, and dried rosemary. Stir constantly for 30 seconds until fragrant.
  4. Pour in the chicken broth and add the bay leaf. Scrape up any browned bits from the bottom of the pot. Bring to a gentle boil.
  5. Add the chicken thighs, nestling them into the broth. Reduce heat to low, cover, and simmer for 15-18 minutes until chicken is cooked through (internal temperature of 165°F/74°C).
  6. Remove the chicken thighs with tongs and let rest on a cutting board for 5 minutes. Meanwhile, bring the broth back to a gentle boil.
  7. Add the egg noodles to the boiling broth. Cook according to package directions (usually 8-10 minutes), stirring occasionally.
  8. While the noodles cook, shred the chicken into bite-sized pieces using two forks.
  9. Return the shredded chicken to the pot. Stir and heat through for 2-3 minutes. Taste and adjust seasoning with salt and pepper.
  10. Remove the bay leaf and discard. Ladle soup into bowls, garnish with fresh parsley if desired, and serve hot.

Notes

For best results, don’t rush the vegetable sauté—it builds flavor. Season in layers: add a pinch of salt when sautéing vegetables, another when adding broth, then adjust at the end. If planning leftovers, cook noodles separately and store them apart from the broth to prevent mushiness. Use chicken thighs for more flavor and tenderness; they are also cheaper than breasts.
