  • 4 cups frozen hash browns (about 450g), thawed slightly
  • 1 pound ground breakfast sausage (450g), seasoned
  • 2 tablespoons unsalted butter (30g)
  • 3 tablespoons all-purpose flour (24g)
  • 2 cups whole milk (480ml)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh chives or parsley, chopped, for garnish
  • Optional: shredded cheddar or pepper jack cheese

Instructions

  1. Heat 1 tablespoon butter in a large cast iron skillet over medium heat. Spread thawed hash browns evenly in the pan. Cook undisturbed for 6–8 minutes until the bottom is golden and crispy. Flip in sections and cook another 5 minutes until both sides are crispy. Remove hash browns to a plate and keep warm.
  2. In the same skillet, add ground sausage, breaking it apart with a spatula. Cook over medium heat for 7–9 minutes until browned and cooked through. Drain excess fat if necessary, leaving about 1 tablespoon in the pan.
  3. Add 2 tablespoons butter to the skillet with the sausage fat. Once melted, sprinkle flour evenly and whisk constantly for 1-2 minutes to cook out raw flour taste.
  4. Slowly pour in milk while whisking to avoid lumps. Add garlic powder, onion powder, salt, and plenty of freshly ground black pepper. Cook, whisking frequently, until gravy thickens, about 5-7 minutes.
  5. Return crispy hash browns to the skillet, nestling them gently into the sausage gravy. Let warm together for 2-3 minutes. Sprinkle fresh chives or parsley on top. Optionally, add shredded cheese and cover briefly to melt.
  6. Serve generous portions straight from the skillet.

Notes

Use room temperature milk to prevent lumps in gravy. Cook hash browns undisturbed to get a crispy crust. Adjust seasoning gradually as sausage can be salty. For gluten-free, substitute all-purpose flour with gluten-free flour blend. Optional cheese can be added for extra richness.
