  • 4 chai tea bags (e.g., Tazo Chai or Oregon Chai)
  • 2 tablespoons brown sugar (light or dark)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract (pure)
  • 1 cup oat milk (barista blend preferred)
  • 2 tablespoons pumpkin puree (100% pumpkin, not pie filling)
  • 1 tablespoon maple syrup (or honey)
  • 1/4 teaspoon cinnamon (plus extra for garnish)
  • Pinch of salt
  • Ice cubes (generous amount)
  • Optional: Cinnamon stick, star anise, or nutmeg for garnish

Instructions

  1. Make the chai concentrate: Bring 2 cups of water to a gentle boil in a small saucepan. Remove from heat and add 4 chai tea bags. Steep for 7-10 minutes. Remove tea bags (do not squeeze). Stir in brown sugar and pumpkin pie spice until dissolved. Add vanilla extract. Set aside to cool for about 10 minutes.
  2. Prepare the pumpkin oat milk base: In a mason jar or cocktail shaker, combine oat milk, pumpkin puree, maple syrup, cinnamon, and a pinch of salt. Seal tightly and shake vigorously for about 30 seconds until fully blended and no orange streaks remain.
  3. Assemble the latte: Fill a tall glass generously with ice cubes. Pour the pumpkin oat milk base over the ice. Slowly pour the cooled chai concentrate over the milk base. Do not stir yet—let the layers form.
  4. Stir and garnish: Stir well with a long spoon. Taste and adjust sweetness or spice as desired. Garnish with a sprinkle of cinnamon or nutmeg, and optionally a cinnamon stick or star anise.
  5. Serve immediately: Enjoy right away while the chai is still slightly warm against the cold oat milk.

Notes

For best results, use barista blend oat milk to prevent curdling. Let the chai concentrate cool for at least 10 minutes before assembling. Shake the pumpkin base vigorously to avoid clumps. The chai concentrate can be made ahead and stored in the refrigerator for up to 7 days. For a hot version, skip the ice and gently warm the oat milk.
