This copycat recipe delivers the sweet, buttery, vanilla-forward flavor of a Starbucks iced sugar cookie latte in under 5 minutes with simple ingredients. It’s the perfect cozy holiday treat that even convinced a cold-coffee skeptic.

Ingredients

Scale
  • 1 cup (240 ml) milk of choice (whole milk recommended)
  • 2 shots (about 2 oz or 60 ml) strong brewed espresso or 1/2 cup strong coffee
  • 2 tablespoons (30 ml) sugar cookie syrup (Torani or Monin recommended)
  • 1 tablespoon (15 ml) vanilla syrup
  • Ice cubes (about 1 1/2 cups)
  • Optional: 2 tablespoons (30 ml) half-and-half or heavy cream
  • For the topping (optional): whipped cream, red and green sprinkles, crushed sugar cookies

Instructions

  1. Brew 2 shots of espresso or 1/2 cup of very strong coffee. Let it cool slightly.
  2. Fill a tall glass (16 oz) to the top with ice cubes.
  3. Pour 2 tablespoons sugar cookie syrup and 1 tablespoon vanilla syrup over the ice. Stir to combine.
  4. Add 1 cup of milk (and optional half-and-half or heavy cream). Stir gently.
  5. Slowly pour the brewed coffee over the milk and ice to create layers. Do not stir yet.
  6. Stir everything together. Taste and adjust sweetness or strength as desired.
  7. Top with whipped cream, sprinkles, and crushed sugar cookies if desired.
  8. Serve immediately.

Notes

For best results, use whole milk and high-quality syrups. Let the coffee cool slightly before pouring over ice to prevent excessive melting. Make coffee ice cubes to keep the drink cold without dilution. The drink is best served fresh.
