These Cozy Eyeball Caprese Skewers with Olives are a fun, quick, and delicious Halloween appetizer that combines creamy mozzarella, sweet cherry tomatoes, briny olives, and fresh basil for a spooky yet tasty treat.

  • 1 (8-ounce) container fresh mozzarella balls (ciliegine), drained and patted dry
  • 1 cup cherry tomatoes, rinsed and patted dry
  • 1 (6-ounce) can jumbo black olives with pimentos, drained and patted dry
  • 1/4 cup fresh basil leaves, small or torn
  • 2 tablespoons balsamic glaze (optional)
  • 2024 toothpicks or short skewers
  • Flaky sea salt, to taste
  • Fresh cracked black pepper, to taste

Instructions

  1. Prep your ingredients: Drain the mozzarella balls and pat them dry with paper towels. Drain the olives and pat those dry too. Rinse the cherry tomatoes and basil leaves, then pat everything dry.
  2. Slice the olives: Take each jumbo olive and slice it crosswise into rounds about 1/4-inch thick. Each olive should give you 3-4 slices. If the pimento falls out, tuck it back in.
  3. Assemble the eyeballs: Take a mozzarella ball and place an olive slice on top, pimento side facing out. Press gently so it sticks.
  4. Layer on the skewer: Take a toothpick and thread on a basil leaf (fold if large), then a cherry tomato, then the mozzarella ball with the olive on top. Push everything together gently.
  5. Repeat until done: Continue assembling until all ingredients are used. Arrange on a serving platter.
  6. Season and finish: Sprinkle with a tiny pinch of flaky sea salt and fresh cracked pepper. If using balsamic glaze, drizzle over the platter in a zigzag pattern, avoiding the eyeballs.
  7. Serve immediately or chill: Best served within an hour. To make ahead, assemble without salt and glaze, cover, and refrigerate up to 4 hours. Add seasoning and glaze before serving.

Notes

For best results, pat all ingredients dry to prevent sliding. If olive slices fall off, use a tiny dab of balsamic glaze as ‘glue’. Serve at room temperature for creamiest mozzarella. Embrace imperfect eyeballs—they’re more fun!
