A velvety butternut squash soup topped with nutty sage brown butter. This comforting bowl is naturally creamy without heavy cream, budget-friendly, and perfect for chilly nights.

Ingredients

Scale
  • 1 medium butternut squash (about 2 ½ to 3 pounds), peeled, seeded, and cubed
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter
  • 10–12 fresh sage leaves
  • Optional garnishes: heavy cream or coconut milk, red pepper flakes, toasted pumpkin seeds

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut butternut squash in half lengthwise, scoop out seeds, then peel and cut into 1-inch cubes.
  3. Toss squash cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway, until tender and caramelized.
  4. While squash roasts, heat a drizzle of olive oil in a large pot over medium heat. Add diced onion and cook 5-7 minutes until soft. Add minced garlic and dried thyme, cook 1 minute until fragrant.
  5. Add roasted squash and broth to the pot. Bring to a boil, then reduce heat and simmer 10 minutes.
  6. Remove from heat and blend until smooth using an immersion blender (or carefully in batches in a regular blender).
  7. In a small skillet over medium heat, melt butter with sage leaves. Swirl pan until butter foams and turns golden brown with a nutty aroma, about 3-4 minutes. Remove from heat immediately.
  8. Season soup with salt and pepper to taste. Ladle into bowls, drizzle with sage brown butter, and garnish with crispy sage leaves and optional toppings.

Notes

Roasting the squash instead of boiling adds deeper flavor. Watch the brown butter closely—it can burn quickly. Soup thickens as it sits; add extra broth when reheating. For best flavor, make a day ahead.
