This cozy cranberry orange sauce with fresh ginger is a perfect balance of tart, sweet, and warm flavors. It’s quick to make, uses simple ingredients, and is ideal for holiday meals or any cozy winter gathering.

Ingredients

Scale
  • 12 ounces (340 grams) fresh cranberries
  • 3/4 cup (150 grams) granulated sugar
  • 1/2 cup (120 ml) fresh orange juice
  • 2 tablespoons fresh orange zest (about 1 large orange)
  • 2-inch piece (about 20 grams) fresh ginger, peeled and thinly sliced
  • 1/4 cup (60 ml) water
  • 1 small cinnamon stick (optional)
  • Pinch of salt

Instructions

  1. Prep your ingredients first: wash the cranberries and pick out any soft or shriveled ones. Zest the orange before juicing it. Peel the ginger and slice into thin rounds, about 1/8 inch thick.
  2. In a medium saucepan, combine the fresh orange juice, water, and sliced ginger. Bring to a gentle simmer over medium heat and cook for about 5 minutes to infuse the liquid with ginger flavor.
  3. Add the granulated sugar and stir until completely dissolved, about 2 minutes. If using a cinnamon stick, add it now.
  4. Add the fresh cranberries, orange zest, and a pinch of salt. Stir well. Increase heat to medium-high until the mixture reaches a full boil, then reduce to a gentle simmer.
  5. Simmer for 10 to 12 minutes, stirring occasionally, until most cranberries have burst and the liquid has thickened enough to coat the back of a spoon.
  6. If desired, remove the ginger slices with a fork or strain the sauce through a fine-mesh strainer. For a chunkier sauce, leave some ginger slices in.
  7. Pour the sauce into a heatproof bowl or jar and let cool to room temperature. The sauce will thicken as it cools.
  8. Serve at room temperature or chilled. Store in an airtight container in the refrigerator for up to two weeks.

Notes

For best results, use organic oranges for zest. Simmering the ginger in the liquid first is crucial for flavor. The sauce improves after a day or two in the refrigerator. To prevent burning, keep heat at a gentle simmer and stir occasionally. If sauce becomes too thick after cooling, stir in a tablespoon of water or orange juice.
