  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, cold and cubed

  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar (for caramel)
  • 1/4 cup unsalted butter (for caramel)
  • 1/4 cup heavy cream (for caramel)
  • 1 teaspoon vanilla extract (for caramel)
  • Pinch of sea salt (for caramel, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or cooking spray.
  2. Make the caramel sauce: In a small saucepan over medium heat, melt 1/4 cup butter. Add 1/2 cup packed brown sugar and stir until dissolved, about 2 minutes. Slowly pour in 1/4 cup heavy cream while stirring constantly. Let bubble gently for 1-2 minutes until slightly thickened. Remove from heat, stir in vanilla and a pinch of salt. Set aside to cool slightly.
  3. Prepare the apples: Peel, core, and slice apples into 1/4-inch thick pieces. Toss in a large bowl with 1/4 cup granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1 tablespoon lemon juice until coated. Spread evenly in the prepared baking dish. Drizzle about half of the caramel sauce over the apples; save the rest for serving.
  4. Make the streusel topping: In another bowl, combine 1 cup rolled oats, 3/4 cup flour, 1/2 cup packed brown sugar, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon. Add 1/2 cup cold cubed butter. Use a pastry cutter, fork, or fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces. Sprinkle evenly over the apples without pressing down.
  5. Place the dish on a baking sheet to catch drips. Bake at 350°F for 40-45 minutes, until the topping is golden brown and the filling is bubbling around the edges. If topping browns too quickly after 30 minutes, tent loosely with foil.
  6. Let the crisp rest for at least 10 minutes after baking. Drizzle with remaining caramel sauce and serve warm, preferably with vanilla ice cream.

Notes

For best results, use cold butter and old-fashioned rolled oats. Let the crisp rest after baking to allow the filling to set. The caramel can be made ahead and reheated. For a gluten-free version, use a 1:1 gluten-free flour blend and certified gluten-free oats. For a vegan version, use coconut oil or vegan butter and full-fat coconut cream.
