Ingredients

Scale
  • 6 medium apples (about 2 pounds or 900g), peeled, cored, and sliced ¼-inch thick (mix of Honeycrisp and Granny Smith recommended)
  • 2 tablespoons (30g) granulated sugar
  • 2 tablespoons (30g) light brown sugar, packed
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup (113g or 1 stick) unsalted butter
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (90g) all-purpose flour
  • ½ cup (100g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (55g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven.
  2. Make the brown butter: Place the stick of butter in a large skillet over medium heat. Let it melt completely, then swirl the pan occasionally. After about 4-5 minutes, the butter will start to foam and turn golden. Once you see brown specks forming at the bottom and it smells nutty, remove it from the heat immediately and pour into a heat-safe bowl.
  3. Prepare the apple filling: In a medium bowl, toss the sliced apples with both sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla. Use your hands to coat every slice. Let it sit while you make the crumble.
  4. Make the oat crumble: In a large bowl, whisk together the oats, flour, both sugars, cinnamon, and salt. Pour the warm brown butter over the dry ingredients and stir with a fork until everything is moistened and clumpy. If using nuts, fold them in now.
  5. Assemble the crisp: Pour the apple mixture into a greased 8×8-inch baking dish and spread into an even layer. Sprinkle the oat crumble evenly over the top—do not press it down.
  6. Bake for 40-45 minutes. Place the dish on a baking sheet to catch any overflow. Bake until the filling is bubbly and the topping is golden brown. If the topping is browning too quickly around the 30-minute mark, tent it loosely with foil.
  7. Cool for at least 15 minutes before serving to allow the filling to set.

Notes

For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free baking blend. For a dairy-free option, use a high-quality vegan butter stick. Let the apples macerate for 10 minutes after tossing with sugar and flour to ensure a thicker filling. Bake on a sheet pan to catch any overflow.
