These Cozy Black Bean Ghost Nachos are a love letter to a lost favorite pub dish, featuring a smoky black bean mixture, melted cheese, and adorable sour cream ghosts. Perfect for Halloween or any cozy night in, they come together in under 30 minutes.

  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 medium yellow onion, diced small (about 1 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 chipotle pepper in adobo, minced, plus 1 teaspoon of the sauce
  • 2 tablespoons fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 1 large bag (about 12 ounces) tortilla chips
  • 2 cups shredded Mexican blend cheese
  • ½ cup sour cream
  • ¼ cup sliced black olives (optional)
  • 1 jalapeño, thinly sliced
  • ¼ cup roughly chopped cilantro
  • 3 green onions, sliced
  • Black sesame seeds or tiny black peppercorns for ghost eyes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and cook for about 4 minutes, until translucent and starting to brown.
  3. Add the minced garlic and cook for another 30 seconds, until fragrant.
  4. Stir in the cumin, smoked paprika, and minced chipotle pepper with its sauce. Cook for about 1 minute.
  5. Add the drained and rinsed black beans, lime juice, salt, and pepper. Stir well and cook for 5-7 minutes, stirring occasionally. If the mixture looks dry, add a tablespoon of water.
  6. Using the back of a spoon or a potato masher, gently mash about half of the beans in the skillet to create a creamy texture.
  7. Spread the tortilla chips in an even layer on the prepared baking sheet. Spoon the black bean mixture evenly over the chips.
  8. Sprinkle the shredded cheese all over the beans and chips.
  9. Bake for 8-10 minutes, until the cheese is fully melted and bubbly.
  10. While the nachos bake, spoon the sour cream into a small bowl. Using a tiny spoon or piping bag, dollop small ghost shapes onto a piece of parchment paper. Place two black sesame seeds on each ghost for eyes.
  11. Remove the nachos from the oven. Immediately sprinkle with sliced black olives, jalapeño slices, chopped cilantro, and green onions. Carefully place the sour cream ghosts on top.
  12. Serve immediately.

Notes

Do not over-bake the nachos; check at 8 minutes. Layer chips, beans, and cheese for even distribution. Add sour cream ghosts after baking to prevent melting. The black bean mixture can be made up to 3 days in advance.
