  • 1 sliced onion
  • 3 garlic cloves, minced

  • 1/4 cup apple cider vinegar
  • 1 cup BBQ sauce (store-bought or homemade)
  • 4 cups finely shredded green cabbage
  • 1 cup grated carrots
  • 1/2 cup mayonnaise (or Greek yogurt for lighter option)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or sugar
  • Salt and pepper to taste
  • 12 slider buns or small soft rolls
  • Extra BBQ sauce for drizzling
  • Optional: pickles or sliced jalapeños

Instructions

  1. Trim excess fat from the pork shoulder, leaving some for moisture. Mix smoked paprika, cumin, brown sugar, salt, and pepper in a small bowl. Rub the spice blend evenly over the pork and let sit for 15 minutes at room temperature.
  2. Place sliced onions and minced garlic at the bottom of the slow cooker. Set the pork shoulder on top. Pour apple cider vinegar around the meat. Cover and cook on low for 8 to 10 hours or high for 4 to 5 hours until pork is fork-tender.
  3. Remove pork from slow cooker and shred using two forks or meat claws. Discard large pieces of fat. Return shredded pork to slow cooker juices.
  4. Pour 1 cup BBQ sauce over shredded pork and stir gently. Keep warm on low while preparing coleslaw.
  5. In a medium bowl, whisk mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Add shredded cabbage and carrots, toss to coat evenly. Chill for at least 30 minutes.
  6. Slice and lightly toast slider buns in a pan or oven until golden.
  7. Assemble sliders by spooning pulled pork onto bottom half of buns, topping with tangy coleslaw, drizzling extra BBQ sauce if desired, and placing bun tops. Optionally add pickles or jalapeños.

Notes

Do not rush slow cooker time for tender pork. Season pork well with dry rub. Shred cabbage finely and drain liquid to keep slaw crisp. Toast buns to prevent sogginess. Add extra BBQ sauce or slow cooker juices if pork seems dry. Slaw can be made a day ahead and refrigerated. For spicy variation, add jalapeños or cayenne. Slow cooker can be substituted with Dutch oven braising at 300°F for 3-4 hours.
