  • 1/2 cup light brown sugar (100 g)
  • 3/4 cup all-purpose flour (90 g)
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Vanilla ice cream for serving

Instructions

  1. Peel the peaches by scoring an X on the bottom and blanching in boiling water for 30 seconds, then shock in ice water. Slice into 1/2-inch thick wedges.
  2. In a mixing bowl, combine sliced peaches, granulated sugar, lemon juice, cinnamon, nutmeg (if using), and flour. Toss gently to coat evenly. Set aside.
  3. In a medium skillet over medium heat, melt the unsalted butter. Stir frequently until it foams and turns golden amber with a nutty aroma. Remove from heat and cool slightly.
  4. Add oats, brown sugar, flour, cinnamon, and salt to the browned butter. Stir until combined and crumbly but evenly coated.
  5. Pour the peach filling into a prepared 8×8 inch baking dish and spread evenly. Sprinkle the brown butter crisp topping evenly over the peaches.
  6. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes until the topping is golden brown and crisp and peach juices are bubbling. Tent with foil if topping browns too fast.
  7. Let the crisp rest for 10-15 minutes to thicken. Serve warm with a scoop of vanilla ice cream.
