Juicy peaches, creamy burrata, and salty prosciutto are grilled to perfection in this quick and easy appetizer that’s perfect for summer gatherings. The combination of sweet, smoky, and savory flavors is absolutely irresistible.

  • 4 medium peaches, ripe but firm
  • 8 ounces burrata cheese (2 small balls)
  • 8 thin slices prosciutto
  • 2 tablespoons extra-virgin olive oil
  • 23 tablespoons balsamic glaze
  • Flaky sea salt (like Maldon)
  • Fresh basil leaves for garnish
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using.
  2. Preheat grill to medium-high heat (400-450°F / 200-230°C).
  3. Wash and pat dry peaches. Cut each peach in half, remove pit, then cut each half into 4 wedges (8 wedges per peach).
  4. Gently pat burrata balls dry with paper towels. Cut each ball into 4 equal pieces.
  5. Wrap each piece of burrata with a slice of prosciutto, completely encasing the cheese.
  6. Thread a peach wedge onto a skewer, followed by a prosciutto-wrapped burrata piece, then another peach wedge. Repeat with remaining skewers.
  7. Lightly brush exposed peach surfaces with olive oil. Sprinkle a tiny pinch of salt over the peaches.
  8. Place skewers on hot grill. Cook for 2-3 minutes per side, until peaches have grill marks and prosciutto is crispy and slightly charred.
  9. Transfer skewers to a serving platter and let rest for 1-2 minutes.
  10. Drizzle with balsamic glaze, sprinkle with flaky sea salt, and garnish with fresh basil leaves. Serve immediately.

For best results, use ripe but firm peaches. Soak wooden skewers to prevent burning. Don’t overcrowd the grill; work in batches if needed. Serve immediately for optimal texture.
