  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1 can (10 oz / 284g) diced tomatoes with green chilies (e.g., Rotel)
  • 8 oz (225g) cream cheese, softened
  • 2 cups (8 oz / 225g) shredded cheddar cheese
  • 1 cup (4 oz / 115g) shredded Monterey Jack cheese
  • 1/2 cup (120ml) sour cream
  • Optional toppings: sliced jalapeños, chopped cilantro, diced tomatoes, green onions, black olives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink (6-8 minutes). Drain off excess fat, leaving about a tablespoon in the pan.
  3. Add the diced onion to the skillet with the beef. Cook for 3-4 minutes until soft and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Sprinkle the taco seasoning over the meat mixture and stir to coat. Cook for 1 minute. Add the can of diced tomatoes with green chilies (undrained). Stir and let simmer for 2-3 minutes until the liquid reduces slightly.
  5. In a separate bowl, beat the softened cream cheese with a fork or spatula until smooth. Stir in the sour cream until well combined.
  6. Spread the cream cheese mixture evenly over the bottom of a 9×13-inch baking dish. Top with the seasoned beef mixture, spreading it out in an even layer. Do not mix.
  7. Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the top.
  8. Bake for 15-20 minutes, until the cheese is melted, bubbly, and starting to brown around the edges. For a more golden top, switch to the broiler for the last 2 minutes, watching closely.
  9. Let the dip rest for 5 minutes. Top with your favorite garnishes and serve.

For best results, shred your own cheese from blocks to avoid anti-caking agents. Let the cream cheese soften at room temperature for 30 minutes to ensure a smooth base.
