This creamy peanut butter banana overnight oats recipe takes five minutes to prep the night before and delivers a delicious, filling breakfast that tastes like dessert. Made with simple pantry staples, it’s perfect for busy mornings and endlessly adaptable.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (dairy, almond, oat, or coconut)
  • ¼ cup (64g) creamy peanut butter (natural preferred)
  • 1 large ripe banana, mashed (about ½ cup)
  • 2 tablespoons (30ml) pure maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the ripe banana in a medium mixing bowl with a fork until smooth with a few small lumps.
  2. Add the milk, peanut butter, maple syrup, and vanilla extract. Whisk vigorously until the peanut butter is fully incorporated and the mixture is smooth.
  3. Stir in the rolled oats, chia seeds (if using), and a tiny pinch of salt until all oats are coated. The mixture will be thin.
  4. Divide the mixture evenly into two jars or airtight containers, leaving about an inch of space at the top.
  5. Refrigerate for at least 4 hours, preferably overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, chia seeds, or other desired toppings. Serve cold or microwave for 30-45 seconds for warm oats.

Notes

Use very ripe bananas with brown spots for best sweetness and creaminess. Stir natural peanut butter well before measuring. Don’t skip the salt—it enhances flavor. Oats need at least 4 hours to soften; overnight is ideal. For thicker oats, add extra chia seeds or reduce milk. For thinner oats, add milk in the morning. Store in the refrigerator for up to 5 days; best within 3 days. Not recommended for freezing.
